Azienda Agricola Giacomo Grassi - History

Giacomo Grassi was born in 1970 to a farmer family. Already as a child he started to work in the fields together with his grandfather Olinto and his father Rolando. And immediately he fell in love with manual and traditional work. He became more and more interested in agriculture and decided to study agronomy at high school and university. In 1999 Giacomo Grassi became an agricultural scientist. During his studies at the University of Florence, he never stopped working in agriculture. He regularly worked on the farm of the Grassi family. This has enabled him to gain the experience necessary for this profession. The farm is the agricultural company Azienda Agricola Grassi Rolando. A short history of the company is added at the end of this page.

Azienda Agricola Giacomo Grassi was founded in 1999 as a result of the merger of three farms adjacent to the Grassi family farm, which were abandoned due to the lack of successors. With the help of his sister Debora Grassi, in recent years the olive groves and vineyards have been recultivated by removing the old plants and planting new special crops. At the moment the Azienda Agricola Giacomo Grassi has an area of 25 hectares, including 6 hectares of vineyards, 2 hectares of olive groves and 15 hectares of bush. In the new vineyards, besides San Giovese, there are also some autochthonous, low grape varieties. In the new olive groves native olive varieties from the region were planted.

1996 was a very important year for Giacomo Grassi: this year marks the beginning of monocultivar olive oil production. During the following 8 years, Grassi carried out numerous studies and analyses at its own expense in order to find out for each cultivar which was the ideal moment for harvesting. Finally, in 2004, the first bottling of Monocultivar olive oil took place! From then on, year after year, with further studies and specialisations in the field and in quality, these Monocultivar olive oils are now at the level of the best national and international producers.

Since 1999 Giacomo Gassi has been working as a professional agronomist, in addition to the production of olive oil, especially in the field of viticulture in the most important wine regions of Tuscany. This advice allows him to keep up with the latest knowledge, to carry out new studies and to solve problems for his clients, which often arise depending on the weather and the season.

Another very important moment that marked the positive evolution of the Grassi family's olive oils was 2006, when Giacomo Grassi came into contact with his current girlfriend and mother of his son, the agronomist Fiammetta Nizzi Grifi. Fiammetta's knowledge and commitment have given a great boost to the processing and production of monocultivar olive oils, especially in the sampling, classification and characterisation of individual product batches. Fiammetta is a technical agronomist specialised in the production of olive oil and, together with Giacomo, makes all the decisions concerning the care of the olive groves and the production in the oil mill.

Giacomo's sister Debora is the "designer" of the family. She controls the production of product images, the design of labels, brochures and packaging. In addition to these many tasks, she successfully manages the daily bureaucracy.

In the last 5 - 6 years Giacomo Grassi has taken over many more hectares of olive groves in order to be able to meet the constantly increasing demands of the market and the demand for first-class olive oil. Another company was founded in 2007: Caliptra & Mignola G.N.G. srl. This company is particularly involved in the production and marketing of high quality extra virgin olive oil.

2009 is for Giacomo in a double sense a "year of maturity". In May, his father Rolando dies, missing both as a father and as a great teacher of life and work. In December the son of Fiammetta and Giacomo is born: Rolandopietro (called Piri). He is now associated with a lot of happiness and hopes, also with regard to continuity and tradition of the Grassi family.
